I’m a big fan of boneless buffalo wings. Now really they are jsut fancy chicken nuggets, regardless I love them. But they aren’t exactly good for you, between the deep frying, and the melted butter thats usually mixed with the sauce, and the ranch, and well lets face it, its hard to find some worse for you in such a small bite. But they are so good. So in my continuing effort to lose weight and keep it off while also enjoying my favorite foods I’ve come up with this little creation.
1 box Shake & Bake
1-1.50 pounds boneless chicken breast (skinned)
2 table spoons buffalo sauce
This dish is remarkably simple and incredibly delicious. Start by preheating your oven at 400. While its warming up pour 2 table spoons of your favorite buffalo sauce in a medium sized mixing bowl. Then take your chicken breasts (I prefer precut tenders for this) and chop them into two inch cubes. You should get about thirty chunks out of a pound and a half. As you chop off a chunk drop it in the bowl with the sauce.
Once you’ve gotten all your chicken chopped using a spoon, or your hands as long as their clean, toss the meat around in the sauce until well coated. Then let it sit and marinate a few minutes while you get out the Shake & Bake; you’re going to be using the entire box for this. I like the Ranch and Herb for this dish, but you can use whatever flavor you prefer. Pour half the contents of your mixing bowl into each bag and then add the seasoning mix and shake. The sauce should help get a nice thick coating on each little chicken bite.
Once everything is coated spread your chicken over a sheet pan, make sure you put down some non stick spray before hand, I also like to line the pan with foil to help with cleanup. Once you’ve got everything on the pan and the oven is preheated pop it in for twenty minutes.
Pull it out when done and let sit for a minute as they will be hot. At this point they are great as is or you can dip them in some more of your favorite sauce. You should get three to four servings depending on how many “wings” you want.
